My last name is Schuder, and I’m obviously of German heritage. I grew up eating a lot of German food, but never truly appreciated it until I spent 10 years cooking and living in California, only to move back to the Midwest and brave another winter. Now I crave it with a vengeance. Not only do I have a newfound appreciation for fermentation, which we use to make our own sauerkraut, fermented pepper paste, sweet and spicy beer mustard, and pickled shiitake mushrooms, but also the soul of good German food.
This meal I am extremely excited for, and I hope you are too!
We’ll be baking bread, making pastry, mushroom sausage, spaetzle, and crocks of amazing sauerkraut we’ve been letting mellow for a month.
