Vegan French Feast with Parisian Chef Noe Tissot

The ‘Legend of Lyon’ Noe Tissot is spending a little time in Chicago away from his home in Paris, making his famous vegan croissants, and is collaborating with our team to make an excellent French inspired feast.
He’s best known for his vegan croissants, which are flaky, light, and as delicious as any buttery croissant I remember.
I first met him in San Francisco when I was the chef at Citizen Fox, when he and his friend Julien came in for brunch, and gave us several different kinds of their wonderful, flaky, delicious pastries. Since then, we’ve cooked several meals together, gone to concerts, and they trained me in a little baking.
We’ve gone to great lengths to perfect a rich broth for our French onion soup, making a spherified carrot yolk for our frisée and lardon salad, and Noe will give you one of his famous croissants to take home for breakfast! If you can wait that long.
